recipe: Mexican Inspired Beans - photos soon

This recipe is quite flexible and its perfect for a sunday brunch, you can add other vegetables or some meat if you wish, I made it vegetarian, and it was pretty quick and easy to make.

For 2:

1x 400g can mix beans, 2 garlic cloves crushed, 2 diced tomatoes, 1/2 red capsicum diced, 1 tsp olive oil, 1 tsp cajun spice mix or taco seasoning (a mixture of cumin, chili, paprika), 2 tbsp tomato paste, 2 corn tortillas, 2 eggs, salt and pepper to taste and a sprig of chopped coriander

1. Pre heat your oven to 190C;
2. In a fry pan, heat the oil, add garlic and cook for a couple of minutes;
3. Add tomatoes, capsicum and spice mix. Add beans (previously drained and rinsed) tomato paste and stir well to combine. Correct flavours and set aside;
4. Place each flour tortilla in a small oven proof dish. Fill the tortilla with half of the bean mixture. Make a small hole in the centre of the bean mixture and carefully crack each egg to fit into it. Season with salt, black pepper and top with coriander.
5. Bake the beans for about half an hour ( or until the eggs are coked through) and serve.

recipe: Spinach and Leek fritatta

Right, this recipe is so easy, you almost can just sit and relax...and you can always mix & match with other vegetables, this time I used spinach and leek, but feel free to improvise.

Serves 4:
250g spinach, 1 leek thinly sliced, 5 eggs lightly beaten, 100 ml skim milk, 1 tsp cornflour, 2 tbsp chopped basil, pinch of thyme, salt & pepper

1. In a sauce pan, boil some water and cook spinach until it wilts. Remove spinach to drain;

2. In the same water cook leek for 5 minutes or until soft. Drain and reserve;

3. In a bowl mix eggs, milk, cornflour, chopped herbs, salt and pepper;

4. Place spinach
in the bottom of a previously greased oven proof dish, top with leek and egg mixture stirring lightly with a fork;
5. Bake for half an hour in the oven (180C) or until eggs are cooked in the middle;

6. Remove and let cool for 10 minutes, slice in four pieces and serve with some chopped cucumber and rocket dressed with some olive oil and lemon;

recipe: POTATO & ONION "SPANISH" TORTILLA

So, this is a cheat version of a spanish tortilla and its really simple.

For 3:


3 medium potatoes, boiled and cut into cubes, 1 medium onion thinly chopped, 3 garlic cloves crushed, 4 eggs whisked and seasoned with herbs salt & pepper, 1 teaspoon chopped red chilli *optional, a pinch of sweet paprila, olive oil, salt & pepper to season

1. Cook the potatoes with the skin, when ready let cool, peel and cut into 2 cm cubes.

2. Heat the olive oil in a large non-stick frying pan, add the garlic and onion and cook till onion is soft.
3. Add the potatoes, season with paprika and salt and cook for about 4 minutes.
4. Finally add the eggs, cover with a lid and cook until the eggs are ready.

5. Correct the flavours and serve with a green salad

Quite easy to make and you can play with herbs and spices to add a twist, I sometimes add nutmeg too, love it with eggs
